Bloom Southern Kitchen in Chester Springs is bringing Southern-style comfort food — think chicken and waffles and hushpuppies — to the northern corner of Chester County, writes Ed Williams for Main Line Today.

“There’s no real story as to how we chose the name of this place,” said co-partner David Backhus. “We wanted something that sounded fresh and organic.”

The new eatery opened in the former Eagle Tavern, the original structure of which may date to the 1850s but has been totally refreshed. Its interior sports a stunning mural of twisting vines and poppies by local artist Ellie McIntosh.

The main dining room is warm and spacious with chunky wooden benches and farm-style chairs that add additional charm.

“Southern hospitality is what sets us apart in this area,” said Backus. “We want guests to feel comfortable here from beginning to end.”

Chef de cuisine Natasha Yruel runs a kitchen staff that is 90 percent women. Also, she has instituted an extensive recycling program and maintains solid relationships with local farms and purveyors.

Some of the delicious and locally sourced offerings include cheese-and-charcuterie boards focused on regional varieties. The BLT features Benton’s famous bacon with fried green tomatoes sourced from Pottstown’s Broadwing and Knee High farms.
