Beef Tongue Tacos? Beef Heart Tartare? New Restaurant Near Montco Border Uses Every Part of the Steer

A new restaurant that sits just beyond Montgomery County’s western border and occupies a building that predates the Civil War is keeping its menu local, while committing to using every part of the steer, writes Susan Shelly for the Daily Local News.

The Ironstone opened in Boyertown earlier this year, and its locally sourced offerings are a point of pride among management and staff.

“There’s tons of farms stands within a stone’s throw from here,” said executive chef John Hanna said. “We’ve got all these great resources available to us, which is really exciting.”

Hanna’s menu features beef tongue tacos and beef heart tartare. He saves cow shins to make osso buco and also roasts bones for stock.

“I want to respect the animal and the hard work that went into raising it and butchering it,” he said. “Nothing gets wasted.”

Constructed in 1859, The Ironstone’s building once operated as a public house and later as the William Penn Hotel. It then became known as the Mansion House and served as a hub for leaders of business, industry, and politics, reportedly providing patrons with alcohol during the Prohibition.
