Pizzeria Vetri, Coming Soon to King of Prussia, Hasn’t Let the Pandemic Toss It for a Loop

Pizzeria Vetri is run by executive chef John Sidoti, who curates the focused menu at Pizzeria Vetri’s all three locations and will do so for the upcoming fourth shop in King of Prussia, writes Ed Williams for Main Line Today.

In early February, Pizzeria Vetri will return to King of Prussia with a new space in the King of Prussia Town Center, marking the pizzeria’s fourth location in the Greater Philadelphia Area.

The 2,000 square foot establishment will feature 96 seats across beautifully designed indoor and outdoor spaces. The new location will be a complete redesign and the first to fit the new brand identity.

A rounded bar and pizza counter will be anchored by a pizza oven in the center of it all, allowing Pizzeria Vetri to continue its blending of kitchen and dining, where the chefs display the art of Italian pizza making. The pizza restaurant will feature simple food made exactly the right way, using the best and freshest ingredients, served in a
space where all are welcome.

The original King of Prussia Mall location closed in early 2020, due to the COVID-19 pandemic.

The venture is thriving at its recently opened Devon Courtyard location where it launched as a popup during the pandemic closures.

Sidoti worked as a line chef at Osteria in Center City before migrating toward pies. He has easily recognizable energy and passion for the business.

“Losing my dad early in life gave me a sense that life is short. Don’t be angry; do what you love, and do it well,” he philosophized.

For Pizzeria Vetri, “do it well” is the mantra.

The pizza dough is key. It is made from only four ingredients, and it ferments for four days. Its simple components are universally fresh; no freezers inhabit any of its three locations. The sauce is also made onsite; cheeses are sourced from Di Bruno Bros.

In addition to pizzas, the menu includes pork-stuffed meatballs and a prosciutto-and-burrata board. The selection of cocktails includes Gintermission and a Smoked Cherry Old Fashioned.
