Cutter and Cannon Spirits, a new rum-focused distillery, is set to open in West Chester as early as November, by local entrepreneurs Cole Bauer and Matt Mowatt, writes Emma Dooling for the Philadelphia Business Journal.
Bauer, based in Chester Springs, and Mowatt, a Broomall resident, are looking to fill a gap in Chester County’s distilling scene and hope to secure all licenses and approvals within the next two months.
The pair worked together for years in engineering and construction, and during a dinner, realized they shared a similar dream: to own a distillery.
“By the end of the dinner, we decided that we should open a distillery focusing on rum, because rum is what I would consider an underserved spirit in this country, compared to bourbon and whiskey, which are just incredibly popular, and, of course, vodka,” said Bauer.
After researching spaces in 2024, they found the perfect West Chester location. The site will include a tasting room at the front and a distillery in the back.
Production will begin with a Red, White, and Blue Bourbon, a dark rum, and a Navy Strength Rum.
