La Baja in Ambler is a new eatery that blends the diverse flavors of the Mexican border into a delicious menu, guaranteed to satisfy even the most discerning of palates, reports Bob Kelly for FOX 29 Philadelphia.
“La Baja is a region in Mexico, Baja California,” said Mariangeli Alecia Saez, co-owner of La Baja. “It has a lot of Asian migration that settled there in the 1920s and they left a lot of their food and ingredients that now are part of that cuisine.”
The menu has been envisioned by Chef Dionicio Jiménez, who co-owns the restaurant with his wife, a two-time nominee for the James Beard Award.
Local favorites include Pulpo y Mollejas, a mix of central and north Mexico cuisines with sweetbreads, octopus, and ayocote puree, Risotto featuring Hibiscus-Mexican chocolate braised short rib and queso añejo, and Shishito, made with dried shishitos, soy, lemon, and scallions.
Among the delicious desserts that are on offer is a mouthwatering Creme Brule as well as Poblano Tres Leche.
For an added bonus, patrons can enjoy the sight of a beautiful mural. The painting features an alebrije, fantastical creatures made up of several animals.
