Philadelphia chef Mike Solomonov recently launched his own line of hummus in Whole Foods stores along the East Coast, and sees a tub of grocery-store hummus as a canvas for creativity, writes Pervaiz Shallwani for The Wall Street Journal.
Specifically, Solomonov thinks hummus with an added garnish of sizzling pine nuts and spiced ground beef makes for a delicious Super Bowl spread.
A version of it is available at Zahav, his flagship restaurant in Old City.
To make it, heat 2 tablespoons of canola oil in a large skillet over high heat, then add a cup of chopped onions and cook, stirring it until it softens.
Then add a pound of ground beef, 2 slivered garlic cloves, 2 tablespoons of pine nuts, and a pinch of salt.
Cook and stir until the beef is browned for about 10 minutes, add ½ teaspoon of baharat spice or pumpkin spice.
Adjust seasoning to taste.
Whatever the garnish, Solomonov lets the hummus come to room temperature and gives it a good stir before serving.
“It makes a big difference,” he said. “If you bring it to room temperature and fluff it up, it won’t taste like store-bought.”
