Connecticut chain, PopUp Bagels will soon open its doors in Ardmore’s Suburban Square, writes Michael Klein for the Philadelphia Inquirer.
The popular breakfast spot will take over the space formerly occupied Juice Press beside Dry Bar and Soul Cycle.
The brand has become a sensation since its 2021 launch, known for its “Grip, Rip and Dip” format. Unlike traditional shops, PopUp doesn’t slice or make sandwiches. Instead, customers buy bundles of hot bagels – three, six, or twelve at a time, and pair them with cups of cream cheese “schmears” or butter for dipping. Of course, coffee rounds out the menu.
The Ardmore shop will be run by Montco’s Brian Harrington, a restaurant veteran. He also launched two PopUp locations in Boston earlier this year. His franchise territory includes Philadelphia and its suburbs, as well as South Jersey. Harrington plans for additional stores in Washington, D.C., Maryland, and the Virginia markets.
PopUp founder Adam Goldberg started baking bread during the pandemic before shifting to bagels. His lighter, softer recipe quickly caught on, leading to sales in New York and garnering a wave of investor interest.
With 13 East Coast stores already open, the company announced agreements for 300 new shops across the country.
