Kismet Bagels Gives Us Grilled Cheese With a British Twist

Kismet Bagels, owned by Alexandra and Jacob Cohen, has a grilled cheese sandwich with a twist.

Alexandra and Jacob Cohen brought more than happy memories back from their trip to London a few years ago.

They also brought back a great grilled cheese recipe, writes Alicia Vitarelli for 6abc.

The couple own the Kismet Bagels Luncheonette in Penn Valley, which just opened this past Valentine’s Day.

“They have this unbelievable grilled cheese stand there,” Jacob Cohen said. “They call them ‘toasties.’ It’s smothered in cheese, but it also has very finely chopped leeks and onions in it. We wanted to bring that here!”

It starts with sourdough made form Baker Street Bread Co. in South Philly. Slather on some mayonnaise for grilling, load it up with cheddar cheese on one side and cooper cheese on the other, then add the British twist—diced onion and shredded leeks.

The final product is an exact duplicate of their London experience.

The couple created the fan favorite Kismet Bagels during the pandemic. They had no culinary experience, but they did have a craving for a bagel.  Since they couldn’t leave the house, they learned to make their own.

Now they have a stand at Reading Terminal Market and the luncheonette.
