Despite the closure of Empanadas Lab, North Wales fans of the Iberian and Latin American delicacy will still be able to enjoy their favorite meal thanks to the newly opened Empanada Noshery, writes Tony Di Domizio for the North Penn Now.

The new eatery is run by North Wales Fire Department volunteer fire police officers Gabe and Lorena Mejias. They opened their store on July 1, in the same spot where Empanadas Lab used to operate.

“It is not coincidence (that another empanada restaurant is replacing another one),” said Gabe. “We knew the owners of Empanadas Lab for many years. As a matter of fact, we helped them out with marketing by creating the logo and social media when they first took over the restaurant.”

And while they will continue to offer empanadas, the couple, who are from Puerto Rico and the Dominican Republic, also plan to incorporate flavors from the islands.

In addition to the current ten different varieties of empanadas, they want to offer weekly specials and desserts, among other things.
