Little Debbie’s iconic Cosmic Brownie is a favorite childhood treat for many Philadelphians, and a grown-up glow-up version is now available at Loretta’s, writes Chloé Pantazi-Wolber for Philadelphia Magazine.

Kelsey Bush, owner of the Headhouse Square cafe with a distinct nostalgic vibe, considered the Cosmic Brownie a special treat while growing up in central Pennsylvania in the late 1990s and early 2000s. These days, she is not as much of a fan of the original, as her tastes have evolved as an adult, and she also believes that Little Debbie has changed the original recipe.

However, her memories of eating the brownies remain sweet, so much so that she has created a version of the throwback dessert tailored to suit a more adult palate.

The Constellation Brownie is more decadent and not overly sweet, made with high-quality cocoa, butter, and flour. Its heavenly texture strikes just the right balance between fudgy and cakey. It is then topped with a rich, satiny ganache dotted with candy sprinkles – the one detail Bush wanted to keep the same as the original.

“Everyone had a fun way to eat these through their childhood,” she said.
