Veronica Fitzgerald, born in Ecuador, but now living in Bryn Mawr, has become the Main Line expert on the popular empanada, writes Ed Williams for Main Line Today.
She established V Empanadas at the Lancaster County Farmers Market just over a year ago, and it has already become the go-to spot for authentic Spanish cuisine.
She makes her empanadas by hand and does her deep-frying on-site. You can ask to have yours stuffed with pork, cheese, vegetables, short rib and potato, or Mexican-style chicken.
She also offers delicious sides like black beans and rice, queso fresco, plantain chips, and fresh guacamole.
The menu also includes Mexican tamales in five flavors and a dulce de leche empanada for dessert.
V Empanadas is open at the Lancaster County Farmers Market on Wednesdays, Fridays, and Saturdays, 6 a.m. to 4 p.m.
