Meet a Montgomery County Farmer Who Doesn’t Like to Eat Vegetables

A farmer who doesn’t like vegetables?

Doesn’t seem possible, but that is what led Sergio Kuik on a journey to start a nano farm, writes Emily Kovach for PA Eats.

It all began when he was determined to find a way to get the nutritional benefits of veggies without having to eat a lot of them.

A friend suggested microgreens which have higher concentrations of vitamins, minerals, and antioxidants than mature plants. Microgreens are herbs and plants that are harvested at the seedling stage.

Kuik first just started growing microgreens for his family and then launched MicroGreen FX in Schwenksville in 2021.

Here is an excerpt from an interview where Kuik talks about his passion project-turned business.

On the nutritional benefit of eating microgreens, he said, “Just 1 ounce can equal up to 2 pounds of the mature plant. You just need to eat a pinch in the morning and a pinch at night.”

Microgreens also have a higher concentration of sugar which gives you more energy, he added.

Kuik and his family grow 27 different microgreens: including broccoli, kale, sunflower, garnet amaranth, and radish.

They sell their microgreens online through a subscription program and at farmers markets. They also have a partnership with Living Hope Farm’s CSA.
