Jean-Georges Philadelphia Hires Colin Henderson As New Chef de Cuisine
Celebrity chef Jean-Georges Vongerichten’s restaurant, Jean-Georges Philadelphia has hired a new chef de cuisine, writes Michael Klein for The Philadelphia Inquirer.
The new chef is Colin Henderson, who is an acolyte of the multi-Michelin-starred chef Daniel Boulud.
After being born and raised in Canada, Henderson eventually gained culinary experience in the United States. This includes working at Boulud’s flagship, Daniel, in New York and a stint working with chef Michael Tusk at three-Michelin-star restaurant, Quince, in San Francisco.
Jean-Georges opened in the summer of 2019, but closed seven months later due to the pandemic before reopening in March 2022.
It features an à la carte menu to supplement the six-course tastings that place it among the priciest offerings in the city.
When asked about the prospect of working with Vongerichten, Henderson said it “really excited me.”
“Jean-Georges has a great style — classic French with Asian flavors — which is kind of cool and exciting,” he added.
Henderson is currently in New York immersing himself with the Jean-Georges team before starting in Philadelphia in April.
Upon becoming chef de cuisine, Henderson noted that the menu will be 100 percent Jean-Georges’, and that his job will be to make sure all the flavors are properly seasoned and executed properly.
