While Margie Perez opened her Colombian/North American-inspired cafe in Pennsbury Township with little fanfare back in February, she has been enjoying her time putting love into all her cooking creations, according to a staff report from Chadds Ford Live.

Perez grew up in Colombia where she had the pleasure of being spoiled by her grandmother’s cooking, so much so that she hardly cooked until she came to the United States. Now that she has a place to call her own, Perez said, “I’m living the dream.”

She describes the menu as being a fusion of Colombian and North American food with all items made from scratch at the restaurant she calls Margie’s Cuisine. Perez uses her grandmother’s recipes as a foundation for the plates she has been developing for the past 13 years.

She utilizes sazon, a specific seasoning with coriander, cumin, achiote, garlic powder, and more that is meant to be full of flavor but not overly spicy.

Some of her dishes include desgranado, a corn salad with lettuce, cheese, potato strings, and cilantro lime and pineapple sauces, and corrientazo, a Latin bowl with chicken, beans, rice, a house dressing, and stuffed arepas. Perez also sells sandwiches, bowls, and banana nut bread.

Margie’s Cuisine is open Wednesday, Thursday, and Friday from 9:30 AM to 3 PM, and Saturday and Sunday from 11 AM to 4 PM on Hickory Hill Road.
