Among recent leases signed by PREIT, owner of area malls that include Plymouth Meeting Mall’s, is one for Honeygrow, the brainchild brand of a Temple University MBA student. Kevin Tierney queued the announced expansion plans for readers of More than the Curve.

The quick-serve, create-your-own salad and stir-fry service has, since it’s 2012 debut, leveraged one Philadelphia storefront to a chain of 29 locations from Boston to D.C.

The company creates a “fully customizable” experience for customers using touchscreen technology to ensure meals are created to purchasers’ specifications to the nth degree. The business model relies heavily on transparency about its ingredients and accessing meats, sauces, and dressings from sustainable sources.

As yet, there are no solid plans for the specific honeygrow site within the mall; possible spots include the former Elevation Burger location, an unoccupied pad adjacent to Shake Shack (both outside the mall), and the soon-to-be-vacated Chipotle space.
