Thousands of years of tradition plus a decade of planning are behind the long awaited new star of the King of Prussia Town Center dining scene.

Ancient recipes with a contemporary twist, along with bright, up-to-the-minute décor and modern branding define the essence of fast casual Choolaah Indian BBQ, located next to Fogo de Chao at 155 Main St., King of Prussia, writes Gary Puleo for The Times Herald.

But co-founder and co-CEO Raji Sankar, with Randhir Seth, has another way of explaining the growing chain’s appeal, although even with four locations now, the affable Sankar is reluctant to use the word “chain.”

“Chain sounds so corporate. We’re a very tight group, with our team members, partners, vendor partners, and whether someone comes here as a high school kid or a trained culinary professional, they feel like they are an important part of it. If anyone asks us what business we’re in,” Sankar said, smiling, “we would say we’re in the business of creating joy.”

The vision for Choolaah — which tweaks the word for an Indian stove called a chulha — took root 10 years ago when a group of partners in Cleveland who operated a string of Five Guys franchises shared a dream of delivering fresh, authentic Indian cuisine cooked in genuine tandoor ovens to the American palate in an efficient, fun way that hadn’t been done before.
