Blackfish BYOB, one of Conshohocken’s most acclaimed restaurants, will close on New Year’s Eve, writes Michael Klein for The Philadelphia Inquirer.
Chef-owner Chip Roman says the decision isn’t driven by finances or burnout, but by a feeling that his life is moving in a new direction.
Roman opened Blackfish in 2006 after training under Marc Vetri and Georges Perrier. The chef said he now feels a pull toward something beyond cooking. Business on Fayette Street remains strong, and his family is doing well, but he believes it’s time to follow “what’s in my head and my heart,” especially after the passing of his father earlier this year.
Blackfish helped shape Conshohocken’s modern dining identity from the start. Early reviews praised Roman’s inventive seafood dishes, bright nautical atmosphere, and the creativity that made the BYOB a regional destination. Over the years, he expanded his footprint with new concepts in Chestnut Hill, Center City, and the Jersey Shore, while building a reputation for thoughtful, technique-driven cooking.
Roman says he may return to the kitchen someday, but for now he’s drawn toward other opportunities and a desire to give back. He thanked guests and staff for making Blackfish a cornerstone of the Conshohocken dining scene for 19 years.
