Glen Mills’ Pizzeria Maki Rolls Out Both Pizza Dough and Fresh Sushi
The unique culinary concept of Pizzeria Maki has opened the doors to its second location in Glen Mills, writes Michael Klein for The Philadelphia Inquirer.
Eight years ago, seasoned restaurant and hospitality consultant Mark Liprie came up with the idea of combining both pizza and sushi.
It lingered in the back of Mark’s mind, scribbled on a napkin and tucked away, until the global upheaval caused by COVID unearthed it once more.
Two years ago, the idea finally came into fruition, and Pizzeria Maki was born, initially as a takeout spot. Now the second 24-seat location in Glen Mills is open for business.
Pizzeria Maki requires the orchestration of separate teams in two kitchens.
A typical order often includes a large pizza and two sushi rolls, providing a satisfying blend of Italian and Japanese flavors.
The pizza kitchen also introduces a playful twist by baking four garlic knots in aluminum pans, designed to be enjoyed with chopsticks and available with a variety of toppings.
Pizzeria Maki, while not the only pizza-and-sushi combo restaurant in the U.S., has successfully carved out a niche in the market.
