How a Wyndmoor BYOB Pub Took the Thrifty Route to Become a Brewery

A Wyndmoor BYOB restaurant has officially earned its status as a brewery. When Eric Connor opened Yankee Chipper in 2021, obtaining a license was not front-of-mind. Connor and his cousin, Shana Cox, were more concerned with establishing a good rapport with the community, according to Jenn Ladd in The Philadelphia Inquirer.  

The establishment was once a smoking bar, so the focus remained on rehabbing the property into a cozy Irish pub.

In the meantime, Connor had been perfecting his own brewed Irish Stout.  

When the time finally came to acquire a liquor license, Connor had to get creative.

Normally, he’d have to take out a second mortgage to cover all the associated costs. But that wasn’t a financially sustainable option.  

Instead, he spent $20,000 to pursue his “G license,” which is a liquor license specifically for breweries. After a year-long process, Connor can brew and sell his own beer, while also offering other Pennsylvania-produced libations.  

While Yankee Chipper’s Irish Stout has not yet made its debut, the establishment currently serves Victory, Troegs, and Workhorse Brewing from King of Prussia, along with an assortment of wines.  

Yankee Chipper is also working with Wissahickon Brewing on creating a lager and IPA.
